Cafe Rio Cilantro Lime Rice



CILANTRO LIME RICE
Cafe Rio Copycat Recipe

1 lb. long grain rice (2 1/4 cups)
1 bunch cilantro
juice of 2 limes
4 cloves garlic or 2 teaspoons prepared chopped garlic
olive oil
1-2  (7 oz.) cans chopped green chilies (optional)

Chop garlic and cilantro. Heat 2 tablespoon olive oil in a 3 qt saucepan. Add rice and all chopped ingredients plus green chilies, if desired. Saute for 3-5 minutes, stirring frequently.  Add 4 cups water and the lime juice and bring to a boil. Reduce heat and simmer until all liquid is absorbed by the rice.
