Rio Bravo Seafood Combo with Tequila Sauce


SEAFOOD COMBO with TEQUILA SAUCE
Rio Bravo Recipe

6 medium size Shrimp
6 scallops 30/40
1 squid (calamari sliced)
2 oz. salmon strips
2 oz. catfish strips
1/2 cup baby clams
8 New Zealand Green Mussels or 8 Black Cultured Mussels
3 tablespoons herb butter
3 tablespoons sweet butter
1/2 cup white wine
1/2 shot tequila
1/2 cup seafood stock
1/4 cup whipping cream
rice or pasta

Put all the Mussels and all the fish ingredients in a pot.  Add the wine and seafood stock and cook a few minutes. Add the butters and continue cooking. Just before the fish has completed cooking add the Tequila. Serve over rice or pasta. Garnish with whipped cream.
