Rio Bravo Shrimp Burritos

Rio Bravo Recipe

Makes 4

6 medium sized shrimp 16/20 
1 small green pepper, sliced 
1/2 onion, sliced 
3 tablespoons black bean puree 
3 tablespoons cooked rice 
3 tablespoons chedder cheese 
3 tablespoons Monterrey cheese 
3 tablespoons Parmegiano cheese 
3 tablespoons tomato sauce 
salt, pepper, garlic, and cilantro to taste. 
4 (12 inch) flour tortillas 
guacamole and sour cream for garnish

Saute the Shrimp until done. Saute the green peppers and onions. Place the sauteed ingredients and the remainder of the ingredients (except the tomato sauce) on the tortillas. Roll up the tortillas and place in a pan to brown it. Slice each tortilla into 3 parts. Serve the tortillas with the tomato sauce and the guacamole and sour cream.
