El Pollo Loco BBQ Black Beans

El Pollo Loco Copycat Recipe

Makes 3 Cups

2 (15 oz.) cans black beans (with liquid)
1 1/2 cups water
1 cup chicken broth
1/2 cup dark brown sugar
3 tablespoons ketchup
2 pieces of bacon, cut into very small pieces
3 tablespoons bacon fat
2 tablespoons red wine vinegar
2 tablespoons minced canned green chiles
1/4 teaspoon cayenne pepper

Cut bacon across the short side into small pieces and fry. You can also cook bacon pieces, drain and cool, and crumble cooked bacon into very small pieces. Reserve the drippings. Combine dripping and small cooked pieces of bacon with remaining ingredients in a saucepan. Cook over medium heat until the mixture just begins reach a boil, reduce the heat and simmer uncovered for 60 to 75 minutes, or until the beans are soft and the mixture thickens.
