Cilantro Lime Chicken Tacos



CILANTRO and LIME TACOS
Baja Fresh Mex Copycat Recipe

Marinade:
1/4 cup fresh lime juice
1/4 cup olive oil
3 garlic cloves, minced
1 1/2 teaspoons brown sugar
1 1/2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon pepper
2 tablespoons fresh cilantro

Taco Fixings:
2 pounds chicken, cut into small pieces
8-10 corn tortillas, toasted/warmed for serving
1/2 cup onion, diced
1/2 cup fresh cilantro, chopped

Marinade: Place ingredients into blender or food processor; blend until smooth. Place marinade and chicken pieces into large plastic resealable bag; squish with hands to cover all pieces in marinade. Place the bag in the refrigerator for 1 to 3 hours.

Preheat a nonstick skillet over medium high heat. Add the chicken to the skillet; stir until browned for 5 to 7 minutes. Top tortillas with chicken, diced onions and cilantro; serve immediately.
