Crispy Salmon

Z'Tejas Copycat Recipe

Main Dish:
2 salmon steaks
1/2 cup roasted tomatillo sauce
2 oz butter cubes
1 tablespoon oil
crab and avocado salad
salt and pepper, to taste

Roasted Tomatillo Sauce:
1/4 pound white onions, sliced
1 pound tomatillos
1 cup water
1 tablespoon chicken base

Crab and Avocado Salad:
1/2 pound Roma tomatoes, diced
2 ounces red onion, finely chopped
1/4 cup cilantro, finely chopped
1 tablespoon lime juice
2 avocados, chopped
1/2 pound crab meat
1 tablespoon salt and pepper
1/2 cup olive oil

Salmon: Season the salmon with salt and pepper. Using a skillet add oil and place on medium heat and right before it smokes and the salmon and cook for about 3 minutes then flip over and cook another 3 minutes.

Add the roasted tomatillo sauce to a sauce pan and the butter and slowly heat until the butter has melted. Place the sauce on a plate then add the salmon on top of the sauce and top the dish off with the crab and avocado salad.

Roasted tomatillo sauce: Roast the onions and tomatillo under a broiler until the skin gets real black, about 15 minutes. Heat water in a sauce pan and add the chicken base, tomatillo and onions. Cook for 2 minutes. Cool down then place in a blender and puree until smooth.

Crab and Avocado Salad:  Add all the ingredients together and gently stir using a rubber spatula.
