Green Mexican Rice



GREEN MEXICAN RICE
El Nino Restaurant Recipe

Serves 4

1 1/2 cup jasmine rice
1 cup blanched tomatillos
1 jalapeno pepper
2 green onions
4 garlic cloves
2 1/2 cups water

Mix green onions, jalapeno, garlic, tomatillos and water in a blender until smooth. Pour mixture into a saucepan. Bring to a boil. Stir in rice and reduce heat. Cover and cook for 20 to 30 minutes.
