Prairie Fire Bean Dip

Don Pablo's Copycat Recipe

1 tablespoon oil
1/2 cup finely chopped onion
1 (15 oz.) can refried beans
1/2 cup shredded cheddar or Monterey Jack cheese
2 tablespoons plain yogurt
2 chipotle chiles, finely chopped
1 tablespoon adobo sauce from the chiles
1/2 teaspoon garlic powder
1/2 teaspoon cumin
dash salt
chips or soft flour tortillas cut into quarters (for serving)

Heat 1 tablespoon oil in a medium skillet over medium-high heat. Add onions and cook for 5 minutes or until soft but not brown.  Place beans in a large microwave safe bowl. Microwave on high for 1 1/2 minutes or until slightly warm and spreadable. Add onions and remaining ingredients to the beans and mix well. Microwave on high for 2 1/2 minutes or until hot. Stir well before serving. Serve with chips or soft flour tortillas cut into quarters.
