Shrimp Tacos

Baja Fresh Mex Copycat Recipe

4 ounces shrimp, about 10 small ones
2 tablespoons water
1 tablespoon hot sauce
1 small tomato, chopped
1 small onion chopped
handful of cilantro, chopped fine
1/4 of an avocado chopped or 1/4 cup guacamole
2 small 6 inch corn tortillas
lemon or lime juice to taste

Cook the shrimp over medium heat on a skillet; remove tails and discard.  Add 2 tablespoons of water and a tablespoon hot sauce; cook for a few minutes until water evaporates. Stir and dice shrimp in the pan into small pieces.  Add chopped tomato and onion; squeeze juice of half a lemon or lime in. Turn heat off once shrimps are firm.  Place tortillas in another skillet over medium heat; cook for 20 seconds or so on each side until softened. Place tortillas on a plate; top with chopped cilantro and avocado and add shrimp mixture.
