El Charro Cafe Restaurant Recipe

1 pound butter or margarine
1 pound powdered sugar
6 eggs
4 cups cake flour
1/4 teaspoon baking powder
1 teaspoon vanilla
1 cup chopped walnuts or pecans

2 cups brown sugar
1 teaspoon ground anise
1 teaspoon vanilla extract

Preheat the oven to 350 degrees. In a large mixing bowl cream together the butter or margarine and the powdered sugar. Add the eggs and beat again until light and fluffy. Samba mix cake flour and baking powder. Gradually add them to the creamed mixture along with the vanilla. Sprinkle the nuts on the bottom of a lightly greased 9x5 inch loaf pan.  For the batter into the pan on top of the nuts. Bake for 55 minutes, or until a toothpick comes out clean and the cake Springs back to the touch. Cool 10 minutes, send turn the cake out into a wire rack to cool completely.

To make the syrup, melt the brown sugar in a heavy saucepan over low heat. Add the ground anise and vanilla extract. Pour the warm syrup over the freshly baked cake. Makes 1 loaf.
