El Charro Cafe Restaurant Recipe

5 pounds pork ribs, crack and trimmed
2 cans chipotle chiles in adobo sauce
1 cup enchilada sauce
1 tablespoon salt
1 tablespoon pepper
1 large onion, chopped
orange slices

Preheat the oven to 325 degrees.Wash and pat dry the pork ribs. Place them on a baking sheet and bake for 25 to 30 minutes. Turn and continue to bake for another 30 minutes, or until the meat pulls away from the phone easily. Remove from the oven and transfer the ribs to a clean baking dish. Add the Chipotle Chile to the enchilada sauce along with salt pepper and spread over the ribs. Add the chopped onion in 3 tablespoons of brown meat juice. Return the ribs to the oven, bake for 10 more minutes. If you have any sauce left, added to the ribs during the second banking. Garnish with orange slices and serve. Makes 6 to 8 servings.
