Chi Chi's Margarita Grilled Chicken

Chi Chi's Restaurant Recipe

1 (10 oz.) can Chi Chi's diced tomatoes and green chilies, drained
1/4 cup orange juice
1/4 cup tequila
1/4 cup vegetable oil
2 tablespoons fresh lime juice
1 tablespoon honey
1 teaspoon minced fresh garlic
1 teaspoon grated lime peel
2 pounds meat, (such as pork tenderloin,chicken breasts, beef tenderloin or flank steak)

In a large recloseable plastic food bag, combine all the ingredients except the meat. Mix well. Add the meat. Seal the bag and turn several times to coat. place the bag in the refrigerator for 8 hours or overnight. Heat the broiler. Remove the meat from the marinade. Place the meat on a broiler pan. Broil 7 to 8 inches from the heat source until desired doneness. In a small saucepan, bring the leftover marinade to a boil. Cook for 5 minutes. Serve the marinade sauce with the meat. Makes 6 to 8 servings.
