Chi Chi's Southwestern Meatloaf



SOUTHWESTERN MEATLOAF
Chi Chi's Restaurant Recipe

1 pound lean ground beef
1/2 pound chorizo or Italian sausage
1/2 cup quick cooking or regular rolled oats
1/2 cup chopped onion
2 eggs, beaten
1 (16 oz.) jar Chi Chi's salsa, divided
1 1/2 cups Chi Chi's refried beans
1 cup shredded cheddar cheese
2 tablespoons diced green chilies

Heat the oven to 350 degrees. Line a 9x5 inch loaf pan with enough foil so that it extends beyond the pan edges. Coat the foil with nonstick cooking spray. In a medium bowl, combine the ground beef, sausage, oats, onion, eggs and 2 tablespoons of salsa.

Press half of the mixture into a prepared pan. Form a 1 inch deep indentation down the center of the meat mixture, leaving a 1 inch border of meat on all sides. In a small bowl, combine the refried beans, cheese and chiles. Mix well. Spoon the bean mixture into he indentation, mounding mixture if necessary. Press the remaining mixture evenly over the beans and meat, sealing the edges.

Bake 1 1/4 hours or until well done. Let stand for 15 minutes. Lift the loaf from the pan using the foil. Spoon the remaining salsa on top of the meat. Makes 6 servings.
